~ Mediterranean Kale Salad ~




I found this recipe from Jennifer Cornbleet's book, Raw Food Made Easy: For 1 or 2 People. Back in January, when I first began learning about raw foods, I watched the companion video. I tried it and was surprised at the difference a little lemon juice and olive oil makes to the flavour of leafy greens. Kale is one of the most nutritious leafy greens, but I would have to say I really don't like it. There is one exception and that is those cheesy kale chips !! They do not taste like kale or have the same texture . Anyhow, I eat kale even though it is not my favorite food because I want to be healthy. Another way to make it more palatable is putting it together in a tasty salad.

The lemon juice, olive oil and sea salt soften the kale and reduce the quantity into half. Add the other ingredients and voila you have a wonderful Mediterranean Salad.

Recipe


1 bunch of kale
1 lemon
1/2 tsp sea salt
2 tbs olive oil
1/4 cup of pine nuts
1 red pepper
black olives

I used sunflower seeds in this recipe because that is all I had, but it is much better with pine nuts for sure.

  3. TJ, I substitute Barlean's Flaxseed oil for olive oil in salads. I actually prefer the flavor of the flaxseed oil. ;^)
