~ Micro Green Salad ~



I really enjoyed this salad made with micro greens. I used watercress, evidine, arugula, baby spinach, radish leaves and sliced radishes.



You can't see the sunflower seeds in my photos, but I threw a handful of those on top with some seasonings.

Olive oil, lemon juice, sea salt, freeze-dried basil and a little herbmare.



I always like to let it set for at least an hour to marinate the leafy greens.




The colors of veggies seem so brilliant when put together with the right napkin or tablecloth.


I just placed the salad in an ice cream dish to make it look a little different and appealing.



Oh I just love veggies !!

~ Not Meat and Pasta ~

This was the raw first time I had tried to make a beef pate to put on my pasta. I find it needed a little work, but still it was filling and very tasty. The base was made it with walnuts.


I added a little olive oil, water and soy seasoning. Then I added all sorts of herbs with a garlic clove and white onion.




I mixed in some raw pasta sauce with my favorite freeze- dried basil on top of the pate. Olives and a little watercress was used to garnish this dish.




It takes lots of time and thought to get new recipes just the way you want them. I think one of the keys for this pate is to add a little more soy seasoning and less fluid to make it look like real beef.

~ Raw Pizza ~

I have been working really hard the last month on my e-book which I hope will be done in March. When I was going through all my recipes I discovered I had many recipes that are considered Italian dishes. I decided to make my first book on RAW Italian foods.



Everyone asks what to have for dinner and Italian foods are very popular answer. Eating RAW Italian foods will encourage those loved ones who shy away from raw foods to give it a chance.



Both my husband and son love these dishes which makes me very happy. I have come up with a pizza crust recipe, raw pizza sauce and spice mix which I just love and very excited about.


For this particular pizza I just put some sauce on the crust and layered it with vine tomatoes, white onion rings, zucchini slices, Parmesan cheese and loads of freeze- dried basil.


The only problem I have is waiting long enough for the crusts to completely dry before we eat them. It smells so delicious I end up pulling out the pizza crusts too early. These pizzas remind me of what I am like with kale chips. These are ADDICTIVE....lol !

~ Raw Sweet Potato Chips ~

These sweet potato chips were the first attempt. They need some work, but they were still surprisingly good. I added a little Herbmare and some olive oil and set them in the dehydrator for twelve hours.


I tried some with olive oil and some without. The ones with olive oil took longer to dehydrate and appeared darker in color.

I actually loved them sliced raw with a little flavour. My son said they tasted interesting which meant they were good. Next time I will try beet chips and see how they turn out.

They don't seem to have the same crunch a potato chip has, but I need to remind myself these are not supposed to be junk food. Raw food is different than cooked. I will continue to work on them and hope to come up with something rawesome.

They were so similar to look at because they curled just like a regular potato chip. I think they are beautiful.

I brought a container of these chips to the gym to munch and I noticed people were looking with curiosity.


Isn't raw food fun and exciting?? !! (:

~ Raw Pasta in the New Year ~

Raw pasta is something we have at least a couple of times a week. You can have it in so many ways. It has been almost a year since I discovered raw foods. I am thrilled to know this is a change that will last forever. It is a challenge switching over to thinking raw when you have been brought up on cooked foods. The temptation seems to always be there to draw me back to the (SAD) diet, but I know how much better I feel when I eat raw foods.



I find being tired, or not putting the effort ahead of time, can set you up to compromise and eat things you know are not good. Plan ahead by washing and chopping your veggies and leave them in the fridge in a sealed container. If I do end up eating something I don't want, which still happens, I always add something green to it. Cilantro is a very good example.



It is my hope to drink a green smoothie for breakfast every morning this year and for an afternoon snack I want to have some green juice. This little pasta dish is an example of a simple raw meal. The pasta on it's own seems to not be enough, but with the avocado it is very satisfying.
