I bought a large beet and wanted to try something different. I used a mandolin slicer to thinly slice beets then topped them with a green sauce.
The green sauce, which had a couple of avocado's, lime juice, handful of cilantro,white onion, garlic and some sea salt, was similar to a raw guacamole.
Such gorgeous colors! I love the avocado sauce, I bet that would pair wonderfully with the earthy sweetness of beets. Just beautiful.
