~ Raw/Vegan Cannelloni ~
This Cannelloni creation was very good and next time I will use the white cream cheese recipe I had in my earlier post. Cannelloni usually has white cheese and this time I just used the tomato sauce that was used for the raw lasagna.
I enjoyed every bite of this....

~ Raw Gingered /Cilantro Stir Fry ~
I could never digest any raw foods before I began eating this way and now I can eat just about anything I want. If I ate raw garlic in the past I would not be able to eat for a week. Eating raw has changed my life. I used to have to eat several hours before bed because it would take that long to digest. That was with lots of digestive enzymes taken well before I ate. Now when I eat I feel fine and can lay down directly after eating.
It is so true that the typical diet has no enzymes in it and causes so many digestion problems. I no longer need to take digestive pills because there are so many active enzymes in the raw, living foods I eat.

~ Great Stuffed Peppers ~

My family really enjoys these raw stuffed peppers. We pick up the pepper and eat it as is or take some of the filling and put it on the romain leaf and roll it into a wrap with the avocado slices.
Some things I prefer to have cooked for example quinoa. I have sprouted it which gives it more nutritional value, but I still choose to have cooked quinoa with all the raw veggies mixed in . It tastes fabulous......


As you can see this dish is sitting on a leaf or romaine lettuce. Eating protein with veggies is best for your body. The way we learned to eat growing up typically was protein with bread or potato which is very hard on digestion. Make sure however to get enough protein and healthy fats with your meals which is essential for your brain health !! Quinoa is an excellent source of protein and with the avocado it makes a balanced meal.
1 bell pepper cut in half
1 cup cooked quinoa
pinch of turmeric
pinch of cayenne
dash of Celtic sea salt
pinch of black pepper
celery seed
2 diced spring onions
2 celery stalks chopped
1 vine tomato diced
1 avocado cubed
1 romaine leaf

A Word of Caution !!
Eating raw does change your life and can be highly beneficial. I believe we were created to eat this way, but being in an imperfect world sometimes we just don't get all we need out of eating only raw/vegan. If your on the raw diet I would strongly recommend that you always make sure your blood is at a healthy place. B 12 and your Iron should be checked at least twice a year. I was not aware of the need for supplementation and my blood levels dropped too low. I became anemic and didn't know it. This can be dangerous for your nervous system. Eating RAW is an exceptional way to eat, but make sure to be on the safe side. Monitor your blood levels and you should thrive with beauty and vitality.
My B 12 dropped down to about 200 from 700. Now it is up to 1000 which is a little too high. The sad thing about it getting too low to for too long can cause permanent damage. Some people do absolutely fine on raw/vegan and others do need support like myself. The reality anyone on any diet can get low of these essential vitamins, but being a vegan eating no meat may put you at a higher risk. Everyone is slightly different in their body chemistry with so many factors to consider.

I have been able to relate to Shakaya the last couple of years watching her and seeing her love and passion for foraging for wild edibles as she calls it. What once seemed like just weeds has become food. I get excited to go outside and see all the food that is out there. Mind you, what you see outside is not necessarily edible unless it is clean and pesticide free. I enjoyed finding raw berries, dandelion greens and loads of clover.

Edible weeds, herbs and leafy greens is my passion and just love all her photos.

I was really touched by her blog article describing how a homeless man led her to a natural spring. His serendipitous appearance blessed her whole family with a wealth of natural bounty. I wondered if perhaps he was a messenger sent by God to help her find her way. I mentioned to her that "You never know when you are entertaining an angel". The thought of it just gave me goose bumps.

~ Coconut Water ~
Getting fresh young coconuts are not so easy where I live. I still want to get the essence from this amazing water so I try to open these hard old coconuts. It does not contain the same amount of electrolytes as a younger coconut, but a much better option than regular water.
My husband just loves eating the coconut meat. I shave this type of coconut and put in in my raw chocolate pies for my son.
Once I get the approval I plan to do a ten day water fast using this type of coconut water to keep me going. I am hoping that the fast will put me in remission.
I have not been blogging for several months due to illness. I am in hopes of recovery. I had a fall and tore ligaments in my left ankle. Due to laying on my back for months I may have developed a very unusual disorder called POTS. Laying in the same position for too long is not good for body rhythms and has set my heart into a postural orthostatic tachycardia syndrome. I would strongly recommend to anyone who has injury to NEVER lay in the same position for months at a time. At this point I don't have a definite diagnosis, but it is looking like this may be the case. Typical medicine does not have answers, but will encourage further degeneration. The best chance I have is a living food diet, lots of fresh air, sunshine, living water, supplement that supports the heart and nervous system new found faith and this amazing guided mindful awareness I have been learning about to reset my nervous system.

Tantalizing and Detoxing Truffles
Sesame seeds are very high in calcium and great for you. These were so good I was so delighted to come up with something that satisfied the sweet tooth, but was low in sugar and had ingredients which will encourage healing.
1 cup apricots
1 inch ginger root grated
1 cup almonds
¼ cup walnuts
¼ cup pecans
¼ cup flax meal
3 tsp honey
1 T almond milk
dash of sea salt
2 T cacao powder
¼ cup sesame seeds
Process nuts until ground the add the apricots and ginger.
Add all the remaining ingredients. Shape in the balls and roll them in white sesame seeds.
Store them in the freezer in a sealed container for up to three weeks.
